Philly Roast Pork Sandwich

- 4 pounds Pork shoulder
- 4, split in half Italian rolls
- 8 slices Provolone cheese
- 2 large, sliced Onion
- 3 tablespoons, divided Olive oil
- 1 teaspoon Black pepper
- 1 teaspoon Salt
- 1 tablespoon Dried oregano
- 1 tablespoon Garlic powder

Instructions
- Preheat the oven to 325°F (160°C).
- In a small bowl, mix together the garlic powder, dried oregano, salt, and black pepper to create the spice rub.
- Rub the pork shoulder generously with the spice mixture, ensuring it's evenly coated on all sides.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the pork shoulder on all sides until browned, about 5 minutes per side.
- Transfer the seared pork shoulder to a roasting pan and roast in the preheated oven for about 3 hours, or until the internal temperature reaches 145°F (63°C).
- Once cooked, remove the pork shoulder from the oven and let it rest for 10 minutes before slicing thinly.
- While the pork is resting, heat the remaining 2 tablespoons of olive oil in a skillet over medium heat.
- Add the sliced onions and sauté, stirring occasionally, until caramelized and golden brown, about 10-12 minutes.
- Slice the Italian rolls in half and place a slice of provolone cheese on the bottom half of each roll.
- Top the cheese with slices of the roast pork and the sautéed onions.
- Place the assembled sandwiches under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.
