Pho Rito

- 4 large Flour tortillas

- 1 cup Bean sprouts
- 1 pound, thinly sliced Beef sirloin
- 8 ounces Rice noodles

Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a large pot, heat a tablespoon of oil over medium heat. Add the minced garlic, sliced ginger, and chopped onion. Cook until fragrant and the onion is translucent, about 5 minutes.
- Add the beef broth, cinnamon stick, star anise, cloves, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes to meld the flavors.
- While the broth is simmering, heat a skillet over high heat. Add the beef sirloin slices and cook for 2-3 minutes until browned and cooked to your desired doneness. Set aside.
- Warm the flour tortillas in a dry skillet or microwave until pliable.
- To assemble the Pho Rito, place a tortilla on a clean surface. Arrange a portion of cooked rice noodles, beef sirloin slices, bean sprouts, and a mix of basil, cilantro, and mint leaves in the center of the tortilla.
- Drizzle hoisin sauce, sriracha sauce, and soy sauce over the filling.
- Fold the sides of the tortilla over the filling, then roll it up tightly to form a burrito shape.
- Repeat with the remaining tortillas and filling ingredients.
- Serve the Pho Ritos with lime wedges on the side for squeezing over the burritos.
