Ingredients

Olive oil
2 tablespoons
Onion
1 medium, diced
Garlic
2 cloves, minced
Bell pepper
1 medium, diced (any color)
Ground beef
1 pound
Diced tomatoes
1 can (14.5 ounces)
Green olives
1/2 cup, sliced
Raisins
1/4 cup
Ground cumin
1 teaspoon
Dried oregano
1 teaspoon
Salt
to taste
Black pepper
to taste
Cooked rice
to serve
Black beans
to serve

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion, minced garlic, and diced bell pepper to the skillet. Cook until softened, about 5 minutes, stirring occasionally.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it up with a spoon, about 6-8 minutes.
  4. Stir in the diced tomatoes (with their juice), sliced green olives, raisins, ground cumin, dried oregano, salt, and pepper. Mix everything well.
  5. Reduce the heat to low and let the mixture simmer for 15-20 minutes, allowing the flavors to meld together. Stir occasionally and taste for seasoning, adjusting if necessary.
  6. Serve the picadillo over cooked rice, with black beans on the side for a hearty meal.
