Picadillo de Chorizo

- 2 tablespoons Olive oil

- 1 large, finely chopped Onions
- 2 large, peeled and cubed Potatoes
- 200g, sliced Chorizo

Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chorizo and cook until it starts to release its oil and becomes browned, approximately 5 minutes.
- Add the finely chopped onions and minced garlic to the skillet. Cook until the onions become soft and translucent, about 5 minutes.
- Add the cubed potatoes, salt, black pepper, paprika, and cumin to the skillet. Stir all the ingredients until they are well combined.
- Cover the skillet and let it cook until the potatoes are tender and have absorbed the flavors of the chorizo and spices, around 15 minutes.
- Serve the Picadillo de Chorizo hot. Garnish it with fresh parsley and a squeeze of lemon for added freshness, if desired.
