Pickled Fresno Chilies

Ingredients
- Fresno chilies
- 10-12, sliced
- White vinegar
- 1 cup
- Water
- 1 cup
- Sugar
- 2 tablespoons
- Salt
- 1 tablespoon
- Garlic
- 3 cloves, smashed
- Coriander seeds
- 1 teaspoon
- Mustard seeds
- 1 teaspoon
Instructions
- In a medium saucepan, combine the white vinegar, water, sugar, salt, smashed garlic, mustard seeds, and coriander seeds. Heat over medium heat, stirring occasionally until the sugar and salt are fully dissolved.
- Once dissolved, add the sliced Fresno chilies to the saucepan. Bring the mixture to a gentle simmer.
- Allow the chilies to simmer for about 5 minutes until they slightly soften and absorb the flavors of the pickling liquid.
- Remove the saucepan from the heat and let the chilies cool in the pickling liquid for about 15 minutes.
- Transfer the chilies and the pickling liquid into a clean glass jar, ensuring the chilies are fully submerged in the liquid.
- Seal the jar and refrigerate. The pickled chilies will be ready to enjoy after 24 hours and can be stored in the refrigerator for up to 2 weeks.
