10-12, sliced
White vinegar
1 cup
Water
1 cup
Sugar
2 tablespoons
Salt
1 tablespoon
Garlic
3 cloves, smashed
Coriander seeds
1 teaspoon
Mustard seeds
1 teaspoon

Instructions

  1. In a medium saucepan, combine the white vinegar, water, sugar, salt, smashed garlic, mustard seeds, and coriander seeds. Heat over medium heat, stirring occasionally until the sugar and salt are fully dissolved.
  2. Once dissolved, add the sliced Fresno chilies to the saucepan. Bring the mixture to a gentle simmer.
  3. Allow the chilies to simmer for about 5 minutes until they slightly soften and absorb the flavors of the pickling liquid.
  4. Remove the saucepan from the heat and let the chilies cool in the pickling liquid for about 15 minutes.
  5. Transfer the chilies and the pickling liquid into a clean glass jar, ensuring the chilies are fully submerged in the liquid.
  6. Seal the jar and refrigerate. The pickled chilies will be ready to enjoy after 24 hours and can be stored in the refrigerator for up to 2 weeks.
