Instructions
- In a large mixing bowl, combine the all-purpose flour, warm water, and salt. Stir until a rough dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 20 minutes to relax the gluten.
- Meanwhile, in another bowl, mix the ground pork, chopped green onions, soy sauce, and sesame oil until everything is well combined and the mixture is slightly sticky.
- Roll out the rested dough on a floured surface to about 1/8 inch thick. Use a round cutter or a glass to cut out circles approximately 3 inches in diameter.
- Place a small spoonful of the pork mixture in the center of each dough circle.
- Carefully crack a pigeon egg into the center of the pork filling, ensuring not to break the yolk. Gently fold the dough over the filling to create a half-moon shape, then pinch and seal the edges tightly to prevent leakage during cooking.
- Bring a large pot of water to a boil. Carefully add the dumplings, ensuring not to overcrowd the pot. Cook them for about 10 minutes or until they float and the dough is cooked through.
- Using a slotted spoon, remove the dumplings and drain any excess water. Serve hot with additional soy sauce for dipping.
