Ingredients

All-purpose flour
2 cups
Water
3/4 cup, warm
Salt
1/2 teaspoon
Ground pork
1 pound
Green onions
3, finely chopped
Soy sauce
2 tablespoons
Sesame oil
1 tablespoon
Pigeon eggs
8, gently cracked
Additional soy sauce
for serving

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, warm water, and salt. Stir until a rough dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 20 minutes to relax the gluten.
  3. Meanwhile, in another bowl, mix the ground pork, chopped green onions, soy sauce, and sesame oil until everything is well combined and the mixture is slightly sticky.
  4. Roll out the rested dough on a floured surface to about 1/8 inch thick. Use a round cutter or a glass to cut out circles approximately 3 inches in diameter.
  5. Place a small spoonful of the pork mixture in the center of each dough circle.
  6. Carefully crack a pigeon egg into the center of the pork filling, ensuring not to break the yolk. Gently fold the dough over the filling to create a half-moon shape, then pinch and seal the edges tightly to prevent leakage during cooking.
  7. Bring a large pot of water to a boil. Carefully add the dumplings, ensuring not to overcrowd the pot. Cook them for about 10 minutes or until they float and the dough is cooked through.
  8. Using a slotted spoon, remove the dumplings and drain any excess water. Serve hot with additional soy sauce for dipping.
