Ingredients
- Shortcake biscuits
- 6-8, store-bought or homemade
- Fresh strawberries
- 2 cups, hulled and sliced
- Fresh pineapple
- 2 cups, peeled, cored, and diced
- Honey
- 2 tablespoons
- Whipped cream
- 1 cup, for topping
- Mint leaves
- fresh, for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- If using homemade shortcake biscuits, prepare them according to your favorite recipe. For store-bought, slice the biscuits in half horizontally and place them on a baking sheet.
- Bake the biscuits for 10-12 minutes, or until they are golden brown and heated through. Remove from the oven and let cool slightly.
- In a medium bowl, combine the diced pineapple and sliced strawberries. Drizzle the honey over the fruit mixture and gently toss to coat the fruit evenly.
- Once the shortcake biscuits have cooled, place the bottom halves on serving plates.
- Spoon a generous amount of the fruit mixture onto each biscuit half.
