Ingredients

Shortcake biscuits
6-8, store-bought or homemade
Fresh strawberries
2 cups, hulled and sliced
Fresh pineapple
2 cups, peeled, cored, and diced
Honey
2 tablespoons
Whipped cream
1 cup, for topping
Mint leaves
fresh, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. If using homemade shortcake biscuits, prepare them according to your favorite recipe. For store-bought, slice the biscuits in half horizontally and place them on a baking sheet.
  3. Bake the biscuits for 10-12 minutes, or until they are golden brown and heated through. Remove from the oven and let cool slightly.
  4. In a medium bowl, combine the diced pineapple and sliced strawberries. Drizzle the honey over the fruit mixture and gently toss to coat the fruit evenly.
  5. Once the shortcake biscuits have cooled, place the bottom halves on serving plates.
  6. Spoon a generous amount of the fruit mixture onto each biscuit half.
