Pineapple and Strawberry Shortcake

Indulge in the vibrant flavors of summer with this delightful Pineapple and Strawberry Shortcake. This refreshing dessert features succulent pineapple and sweet strawberries layered between fluffy shortcake biscuits, all crowned with a cloud of whipped cream and a sprinkle of fresh mint. Perfect for warm gatherings, this dish not only satisfies your sweet tooth but also pays homage to the classic American shortcake tradition, which dates back to the 19th century.

Serves 6-8

Ingredients

Shortcake biscuits
6-8, store-bought or homemade
Fresh strawberries
2 cups, hulled and sliced
Fresh pineapple
2 cups, peeled, cored, and diced
Honey
2 tablespoons
Whipped cream
1 cup, for topping
Mint leaves
fresh, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. If using homemade shortcake biscuits, prepare them according to your favorite recipe. For store-bought, slice the biscuits in half horizontally and place them on a baking sheet.
  3. Bake the biscuits for 10-12 minutes, or until they are golden brown and heated through. Remove from the oven and let cool slightly.
  4. In a medium bowl, combine the diced pineapple and sliced strawberries. Drizzle the honey over the fruit mixture and gently toss to coat the fruit evenly.
  5. Once the shortcake biscuits have cooled, place the bottom halves on serving plates.
  6. Spoon a generous amount of the fruit mixture onto each biscuit half.
  7. Top the fruit with a dollop of whipped cream, allowing it to cascade over the sides.
  8. Carefully place the top halves of the biscuits on top of the whipped cream.
  9. Garnish each shortcake with fresh mint leaves for a pop of color and flavor.
  10. Serve immediately and enjoy the burst of fruity goodness!

Tips

  • 💡 For added flavor, consider macerating the strawberries by sprinkling them with a little sugar and letting them sit for about 30 minutes before combining them with the pineapple.
  • 💡 You can substitute honey with maple syrup or agave nectar for a different sweetener option.
  • 💡 Feel free to add a splash of vanilla extract to the whipped cream for an enhanced flavor.
