Ingredients

Pineapple
2 cups, diced
Red onion
1 medium, diced
Red bell pepper
1 medium, diced
Apple cider vinegar
1/2 cup
Brown sugar
1/4 cup
Garlic
2 cloves, minced
Ginger
1 tablespoon, grated
Cayenne pepper
1/2 teaspoon (adjust to taste)
Salt
1/2 teaspoon

Instructions

  1. In a medium saucepan, combine the diced pineapple, red onion, red bell pepper, apple cider vinegar, brown sugar, minced garlic, grated ginger, cayenne pepper, and salt.
  2. Place the saucepan over medium heat and bring the mixture to a boil, stirring occasionally to ensure the ingredients are well combined.
  3. Once boiling, reduce the heat to low and let the chutney simmer uncovered for about 20-25 minutes, stirring occasionally. The chutney should thicken and the flavors will meld beautifully.
  4. After simmering, remove the saucepan from heat and allow the chutney to cool completely before transferring it to a clean jar or container.
