Pineapple Chutney

- Pineapple
- 2 cups, diced
- Red onion

- Red bell pepper

- Apple cider vinegar

- Brown sugar

- Garlic
- 2 cloves, minced
- Ginger
- 1 tablespoon, grated
- Cayenne pepper
- 1/2 teaspoon (adjust to taste)
- Salt
- 1/2 teaspoon
Instructions
- In a medium saucepan, combine the diced pineapple, red onion, red bell pepper, apple cider vinegar, brown sugar, minced garlic, grated ginger, cayenne pepper, and salt.
- Place the saucepan over medium heat and bring the mixture to a boil, stirring occasionally to ensure the ingredients are well combined.
- Once boiling, reduce the heat to low and let the chutney simmer uncovered for about 20-25 minutes, stirring occasionally. The chutney should thicken and the flavors will meld beautifully.
- After simmering, remove the saucepan from heat and allow the chutney to cool completely before transferring it to a clean jar or container.
