Ingredients

Powdered sugar
1/4 cup, for dusting
Vanilla extract
1 teaspoon
Eggs
2, large
All-purpose flour
1 cup
Sugar
1 cup
Crushed pineapple
1 can (20 ounces), drained
Sweetened shredded coconut
1 cup, divided
Graham cracker crumbs
1 1/2 cups
Unsalted butter
1/2 cup, melted

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish with butter or cooking spray.
  2. In a medium bowl, combine the melted butter, graham cracker crumbs, and 1/2 cup of the shredded coconut. Mix well until the texture resembles wet sand.
  3. Press the crust mixture firmly into the bottom of the prepared baking dish. Make sure to create an even layer.
  4. In a separate bowl, whisk together the drained crushed pineapple, sugar, flour, eggs, and vanilla extract until well combined. This will be your pineapple filling.
  5. Pour the pineapple filling over the crust, spreading it out evenly.
  6. Sprinkle the remaining 1/2 cup of shredded coconut evenly over the pineapple layer.
  7. Bake for 35-40 minutes, or until the coconut topping is golden brown and the center is set.
  8. Allow the bars to cool completely in the baking dish. This step is crucial for the bars to set and firm up properly.
  9. Refrigerate the bars for at least 1 hour to further firm up before slicing.
