Sweetened shredded coconut
2 cups
Crushed pineapple
1 cup, drained
Granulated sugar
3/4 cup
Egg whites
3 large
Vanilla extract
1 teaspoon
Salt
1/4 teaspoon

Instructions

  1. Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the shredded coconut, drained crushed pineapple, granulated sugar, egg whites, vanilla extract, and salt. Stir well until all ingredients are evenly mixed.
  3. Using a cookie scoop or a tablespoon, drop rounded mounds of the mixture onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
  4. Bake in the preheated oven for 18-20 minutes, or until the edges are a beautiful golden brown.
  5. Remove the baking sheet from the oven and let the macaroons cool for 5 minutes. Then, carefully transfer them to a wire rack to cool completely.
