Bursting with the sweet and tangy flavors of fresh pineapple and the coolness of mint, this delightful beverage is a summer staple that will refresh and energize you on those sweltering days. Sip it poolside or enjoy it at a backyard barbecue, and let its vibrant flavors transport you to sun-kissed shores. Serves 6

Ingredients

Fresh mint leaves
1 cup, loosely packed
Pineapple slices
1 cup, fresh or canned
Ice cubes
as needed
Honey
1/4 cup (adjust to taste)
Boiling water
4 cups
Black tea bags
4 bags
Pineapple juice
2 cups, preferably fresh

Instructions

  1. In a large pitcher, combine the fresh pineapple juice and loosely packed mint leaves. Muddle gently with a wooden spoon or muddler to release the mint's oils.
  2. Bring 4 cups of water to a rolling boil. Add the black tea bags to the boiling water and let steep for 5 minutes, depending on your desired strength.
  3. Remove the tea bags and pour the hot tea over the pineapple juice and mint mixture in the pitcher.
  4. Stir in the honey until fully dissolved, tasting to adjust sweetness as needed.
  5. Add ice cubes to the pitcher and stir until the mixture is thoroughly chilled.
  6. Serve the pineapple mint iced tea in tall glasses, garnished with additional pineapple slices and fresh mint sprigs for a beautiful presentation.
