Pineapple cookies have been a beloved treat since the 19th century when pineapple canning made this exotic fruit accessible year-round. Now, you can continue this delicious tradition with my easy-to-follow recipe.

Servings: 24 cookies

Ingredients

Unsalted butter
1/2 cup, softened
Brown sugar
1/2 cup
Granulated sugar
1/2 cup
Egg
1
Vanilla extract
1 teaspoon
All-purpose flour
1 cup
Rolled oats
1 cup
Baking soda
1/2 teaspoon
Salt
1/4 teaspoon
Crushed pineapple
1 cup, drained
Shredded coconut
1/2 cup
Chopped walnuts
1/2 cup

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a spacious mixing bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until you achieve a light and fluffy consistency.
  3. To the butter-sugar mixture, incorporate the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together your dry ingredients: the all-purpose flour, rolled oats, baking soda, and salt.
  5. Gradually introduce the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix as it can make your cookies tough.
  6. Gently fold in the drained crushed pineapple, shredded coconut, and chopped walnuts into your dough, ensuring they're evenly distributed.
  7. Drop rounded tablespoons of dough onto your prepared baking sheet, making sure to leave about 2 inches of space between each cookie to allow for spreading.
  8. Bake for 10-12 minutes, or until the edges of your cookies turn a beautiful golden brown.
  9. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. This helps them to keep their shape.
  10. Enjoy your Tropical Pineapple Oatmeal Cookies as is, or for an extra treat, serve them with a scoop of vanilla ice cream!
