Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a spacious mixing bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until you achieve a light and fluffy consistency.
- To the butter-sugar mixture, incorporate the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together your dry ingredients: the all-purpose flour, rolled oats, baking soda, and salt.
- Gradually introduce the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix as it can make your cookies tough.
- Gently fold in the drained crushed pineapple, shredded coconut, and chopped walnuts into your dough, ensuring they're evenly distributed.
- Drop rounded tablespoons of dough onto your prepared baking sheet, making sure to leave about 2 inches of space between each cookie to allow for spreading.
- Bake for 10-12 minutes, or until the edges of your cookies turn a beautiful golden brown.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. This helps them to keep their shape.
- Enjoy your Tropical Pineapple Oatmeal Cookies as is, or for an extra treat, serve them with a scoop of vanilla ice cream!
