Tropical Pineapple Popsicles

Dive into a taste of the tropics with these luscious Tropical Pineapple Popsicles! Bursting with the vibrant flavors of fresh pineapple, zesty lime, and refreshing coconut water, these popsicles are the ultimate treat for hot summer days. Each bite offers a delightful balance of sweetness from honey and a tangy kick from lime juice, making them not only a refreshing delight but also a healthy choice for both kids and adults. Traditionally, popsicles have roots dating back to the early 1900s, and this tropical twist captures the essence of summer in every frozen bite.

Serves 6

Ingredients

Fresh pineapple
2 cups, chopped
Coconut water
1 cup
Honey
1/4 cup
Lime juice
2 tablespoons, freshly squeezed

Instructions

  1. Begin by chopping the fresh pineapple into small pieces and placing them in a blender.
  2. Add the coconut water, honey, and freshly squeezed lime juice to the blender.
  3. Blend the mixture on high speed until smooth and well combined, ensuring there are no chunks of pineapple left.
  4. Taste the mixture and adjust sweetness if necessary by adding more honey to your liking.
  5. Carefully pour the blended mixture into popsicle molds, leaving a little space at the top for expansion as they freeze.
  6. Insert popsicle sticks into each mold, ensuring they are centered.
  7. Place the molds in the freezer and allow them to freeze for at least 4 hours, or until completely solid.
  8. When ready to enjoy, run the molds under warm water for a few seconds to help release the popsicles.
  9. Gently pull each popsicle from the mold and enjoy your refreshing tropical treat!

Tips

  • 💡 For a creamier texture, you can substitute half of the coconut water with coconut milk.
  • 💡 Feel free to add a handful of fresh mint leaves during blending for an extra refreshing flavor.
  • 💡 You can also layer the mixture with yogurt for a fun, swirled effect.
