Ingredients
- Pineapple chunks
- 1 can (20 oz) or 2 cups fresh, diced
- Granulated sugar
- 1/2 cup
- Water
- 1 cup, divided
- Lemon juice
- 2 tablespoons, freshly squeezed
- Cornstarch
- 2 tablespoons
Instructions
- In a medium saucepan, combine the pineapple chunks, sugar, 3/4 cup of the water, and lemon juice.
- Bring the mixture to a boil over medium heat, stirring occasionally. Once boiling, reduce the heat and let it simmer for 5 minutes to allow the flavors to meld.
- In a small bowl, mix the cornstarch with the remaining 1/4 cup of water to create a smooth slurry.
- Slowly pour the cornstarch slurry into the saucepan while stirring constantly to ensure there are no lumps.
- Continue to cook the sauce for another 5 minutes, or until it thickens to your desired consistency, stirring frequently.
- Once thickened, remove the saucepan from heat and allow the sauce to cool slightly before serving.
- Store any leftovers in an airtight container in the refrigerator for up to one week.
