Original recipe serves 8

Pineapple chunks
1 can (20 oz) or 2 cups fresh, diced
Granulated sugar
1/2 cup
Water
1 cup, divided
Lemon juice
2 tablespoons, freshly squeezed
Cornstarch
2 tablespoons

Instructions

  1. In a medium saucepan, combine the pineapple chunks, sugar, 3/4 cup of the water, and lemon juice.
  2. Bring the mixture to a boil over medium heat, stirring occasionally. Once boiling, reduce the heat and let it simmer for 5 minutes to allow the flavors to meld.
  3. In a small bowl, mix the cornstarch with the remaining 1/4 cup of water to create a smooth slurry.
  4. Slowly pour the cornstarch slurry into the saucepan while stirring constantly to ensure there are no lumps.
  5. Continue to cook the sauce for another 5 minutes, or until it thickens to your desired consistency, stirring frequently.
  6. Once thickened, remove the saucepan from heat and allow the sauce to cool slightly before serving.
  7. Store any leftovers in an airtight container in the refrigerator for up to one week.
