
Pinto Bean and Beef Tamale Pie
This delicious tamale pie is made with a flavorful mixture of pinto beans, ground beef, and corn, topped with a cornmeal crust.
Ingredients
- Cheddar cheese (1 cup, shredded)
- Egg (1)
- Milk (1 cup)
- Baking powder (1 teaspoon)
- All (purpose flour - 1/2 cup)
- Cornmeal (1 cup)
- Salt and pepper (to taste)
- Cumin (1 teaspoon)
- Chili powder (1 tablespoon)
- Tomato sauce (1 can (8 ounces))
- Corn (1 cup, frozen or canned)
- Pinto beans (1 can (15 ounces), drained and rinsed)
- Garlic (2 cloves, minced)
- Onion (1 medium, diced)
- Ground beef (1 pound)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and cooked through.
- Add the pinto beans, corn, tomato sauce, chili powder, cumin, salt, and pepper to the skillet. Stir well to combine and simmer for 5 minutes.
- In a separate bowl, whisk together the cornmeal, flour, baking powder, milk, and egg until smooth.
- Pour the beef and bean mixture into a greased 9-inch pie dish. Spread it evenly.
- Pour the cornmeal batter over the beef and bean mixture, spreading it to cover the entire surface.
- Sprinkle the shredded cheddar cheese on top of the cornmeal batter.
- Bake in the preheated oven for 30-35 minutes, or until the cornmeal crust is golden brown and the filling is bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
- Slice into wedges and serve hot. Enjoy!
