
Pinto Bean and Beef Tostadas
These delicious pinto bean and beef tostadas are packed with flavor and perfect for a quick and satisfying meal.
Ingredients
- Lime (1, cut into wedges)
- Cilantro (1/4 cup, chopped)
- Sour cream (1/2 cup)
- Avocado (1, sliced)
- Tomato (1, diced)
- Shredded lettuce (2 cups)
- Tostada shells (8)
- Salt and pepper (to taste)
- Chili powder (1 teaspoon)
- Cumin (1 teaspoon)
- Garlic (2 cloves, minced)
- Onion (1 medium, diced)
- Pinto beans (1 can, drained and rinsed)
- Ground beef (1 pound)
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion and minced garlic to the skillet with the ground beef. Cook until the onion is translucent.
- Stir in the cumin, chili powder, salt, and pepper. Cook for an additional 2 minutes.
- Add the drained and rinsed pinto beans to the skillet. Stir well to combine and cook for another 5 minutes.
- Preheat the oven to 350°F.
- Place the tostada shells on a baking sheet and warm them in the oven for 5 minutes.
- To assemble the tostadas, spread a layer of the pinto bean and beef mixture onto each warmed tostada shell.
- Top with shredded lettuce, diced tomato, sliced avocado, sour cream, and chopped cilantro.
- Serve the tostadas with lime wedges on the side for squeezing over the top.
