Ingredients

  • Tortilla chips (for serving)
  • Salt (to taste)
  • Garlic powder (1/2 teaspoon)
  • Cumin (1 teaspoon)
  • Chopped green onions (1/4 cup)
  • Diced tomatoes (1/2 cup)
  • Shredded cheddar cheese (1 cup)
  • Sour cream (1/2 cup)
  • Cream cheese (8 ounces, softened)
  • Pinto beans (2 cans, drained and rinsed)

Instructions

  1. In a large bowl, mash the pinto beans with a fork or potato masher until smooth.
  2. Add the cream cheese, sour cream, shredded cheddar cheese, diced tomatoes, chopped green onions, cumin, garlic powder, and salt. Mix well to combine.
  3. Transfer the mixture to a microwave-safe dish and microwave on high for 2-3 minutes, or until heated through and the cheese is melted.
  4. Stir the dip well and serve hot with tortilla chips.
