Servings: 6

Ingredients

Cooking spray
as needed
Breadcrumbs
1/2 cup
Black pepper
1/4 teaspoon
Salt
1/2 teaspoon
Cumin
1 teaspoon
Garlic powder
1 teaspoon
Cream cheese
8 ounces, softened
Cheddar cheese
1 cup, shredded
Pinto beans
1 can (15 ounces), drained and rinsed
Jalapenos
12, halved and seeded

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a baking sheet by lightly coating it with cooking spray.
  3. Carefully cut the jalapenos in half lengthwise. Use gloves if desired, and remove the seeds and membranes to reduce spiciness.
  4. In a large mixing bowl, combine the drained pinto beans, softened cream cheese, shredded cheddar cheese, garlic powder, cumin, salt, and black pepper. Mash the beans slightly as you mix to create a cohesive filling.
  5. Spoon the pinto bean and cheese mixture generously into each jalapeno half, ensuring they are well filled.
  6. Sprinkle the breadcrumbs evenly over the top of each stuffed jalapeno for added crunch.
  7. Arrange the stuffed jalapenos on the prepared baking sheet and bake for 20-25 minutes, or until the jalapenos are tender and the breadcrumbs are golden brown.
  8. Remove from the oven and let cool slightly before serving. Enjoy them warm!
