Pinto Bean and Chicken Fajitas

- 2, medium-sized Chicken breasts
- 1 can (15 oz), drained and rinsed Pinto beans
- 2, sliced Bell peppers
- 1, medium, sliced Onion
- 2 tablespoons Olive oil
- 1 packet Fajita seasoning
- 8, medium Tortillas
- As needed for serving Sour cream
- As needed for serving Guacamole
- As needed for serving Salsa
- As needed for serving Lime wedges

Instructions
- Slice the chicken breasts into thin strips.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken strips to the skillet and cook until they are browned and cooked through, about 5-7 minutes. Once cooked, remove from the skillet and set aside.
- In the same skillet, add the sliced bell peppers and onion. Cook them until they are tender-crisp, which should take about 5 minutes.
- Return the cooked chicken to the skillet. Sprinkle the fajita seasoning over the chicken and vegetables, stirring to ensure an even coat.
- Add the drained and rinsed pinto beans to the skillet. Continue to cook for an additional 2-3 minutes until the beans are heated through.
- While the beans are heating, warm the tortillas in a dry skillet or microwave until they are soft and pliable.
- To serve, spoon the chicken, bean, and vegetable mixture onto the warm tortillas. Top with a dollop of sour cream, a scoop of guacamole, a spoonful of salsa, and finish with a squeeze of fresh lime juice.
