  • Fajita seasoning (1 packet)
  • Tortillas (8, medium)
  • Sour cream (as needed for serving)
  • Guacamole (as needed for serving)

  • Lime wedges (as needed for serving)

Instructions

  1. Slice the chicken breasts into thin strips.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken strips to the skillet and cook until they are browned and cooked through, about 5-7 minutes. Once cooked, remove from the skillet and set aside.
  4. In the same skillet, add the sliced bell peppers and onion. Cook them until they are tender-crisp, which should take about 5 minutes.
  5. Return the cooked chicken to the skillet. Sprinkle the fajita seasoning over the chicken and vegetables, stirring to ensure an even coat.
  6. Add the drained and rinsed pinto beans to the skillet. Continue to cook for an additional 2-3 minutes until the beans are heated through.
  7. While the beans are heating, warm the tortillas in a dry skillet or microwave until they are soft and pliable.
