Servings: 8

Ingredients

Salsa
1 cup
Sour cream
1/2 cup
Tomato
1, diced
Lettuce
1 cup, shredded
Shredded cheese
1 cup
Flour tortillas
8 (10-inch)
Salt
1/2 teaspoon, or to taste
Pepper
1/2 teaspoon, or to taste
Chili powder
1 tablespoon
Cumin
1 teaspoon
Garlic
2 cloves, minced
Onion
1, diced
Pinto beans
1 can (15 oz), drained and rinsed
Ground beef
1 lb

Instructions

  1. In a large skillet over medium heat, brown the ground beef, stirring occasionally to break it into crumbles. Once browned, drain off any excess fat.
  2. Add the diced onion and minced garlic to the skillet with the ground beef. Continue to cook until the onion becomes translucent, about 5 minutes.
  3. Add in the cumin, chili powder, salt, and pepper, stirring well to evenly distribute the spices throughout the beef mixture. Cook for an additional 2 minutes.
  4. Stir in the drained and rinsed pinto beans, ensuring they're well combined with the beef mixture. Reduce the heat to low, cover the skillet, and let simmer for about 10 minutes.
  5. While the beef and bean mixture is simmering, warm the flour tortillas in a dry skillet over medium heat or in the microwave for about 20 seconds.
  6. Once everything is ready, assemble the burritos. Lay a tortilla flat and spoon a hearty portion of the beef and bean mixture into the center. Top with shredded cheese, shredded lettuce, diced tomato, a dollop of sour cream, and a spoonful of salsa.
  7. Fold in the sides of the tortilla over the filling, then roll up from the bottom to form a burrito. Repeat with the remaining tortillas and filling.
  8. Serve your burritos hot, with extra salsa and sour cream on the side for dipping. Enjoy!
