Pinto Bean and Ground Beef Tacos

These delicious tacos are filled with seasoned ground beef and creamy pinto beans.

Ingredients

  • Cilantro (1/4 cup, chopped)
  • Salsa (1/2 cup)
  • Sour cream (1/2 cup)
  • Shredded cheese (1 cup)
  • Diced tomatoes (1 cup)
  • Shredded lettuce (1 cup)
  • Tortillas (8 small flour tortillas)
  • Garlic (2 cloves, minced)
  • Onion (1/2 medium, diced)
  • Taco seasoning (1 packet)
  • Pinto beans (1 can, drained and rinsed)
  • Ground beef (1 pound)

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.
  3. Stir in the taco seasoning and pinto beans. Cook for an additional 5 minutes, until heated through.
  4. Warm the tortillas in a separate skillet or in the microwave.
  5. To assemble the tacos, spoon the beef and bean mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa, and chopped cilantro.
  6. Fold the tortillas in half and serve immediately.
