Servings: 4

Ingredients

Ground Beef
1 pound
Pinto Beans
1 can (15 oz), drained and rinsed
Taco Seasoning
1 packet (1 oz)
Onion
1 medium, diced
Garlic
2 cloves, minced
Tortillas
8
Shredded Lettuce
2 cups
Diced Tomatoes
1 cup
Shredded Cheese
1 cup
Sour Cream
1/2 cup
Salsa
1/2 cup
Cilantro
1/4 cup, chopped

Instructions

  1. Start by heating a large skillet over medium heat. Add the ground beef and cook until it's browned, stirring occasionally to break up the meat. Once browned, drain the excess fat from the skillet.
  2. Next, add the diced onion and minced garlic to the skillet with the ground beef. Cook until the onion becomes translucent.
  3. Stir in the taco seasoning followed by the pinto beans. Continue to cook for an additional 5 minutes until everything is well heated.
  4. While the beef and bean mixture is cooking, warm the tortillas in a separate skillet over medium heat or in the microwave for about 10 seconds each.
  5. To assemble the tacos, start by spooning the beef and bean mixture onto each warmed tortilla. Then top with shredded lettuce, diced tomatoes, shredded cheese, a dollop of sour cream, a spoonful of salsa, and a sprinkle of chopped cilantro.
  6. Fold the tortillas in half and serve immediately. Enjoy your homemade Pinto Bean and Ground Beef Tacos!
