Servings: 4

Ingredients

Ground turkey
1 pound
Pinto beans
1 can (15 ounces), drained and rinsed
Onion
1 medium, diced
Garlic
2 cloves, minced
Cumin
1 teaspoon
Chili powder
1 teaspoon
Salt
to taste
Pepper
to taste
Flour tortillas
4 large
Shredded cheese
1 cup (cheddar or mexican blend)
Sour cream
1/2 cup
Salsa
1/2 cup
Avocado
1, sliced
Lime
1, cut into wedges

Instructions

  1. In a large skillet, cook the ground turkey over medium heat until browned, about 5-7 minutes.
  2. Add the diced onion and minced garlic to the skillet. Cook until the onion is translucent, about 3-4 minutes.
  3. Sprinkle in the cumin, chili powder, salt, and pepper. Stir well to evenly coat the turkey and onion mixture with the spices.
  4. Add the drained and rinsed pinto beans to the skillet. Cook for an additional 5 minutes, stirring occasionally until heated through.
  5. While the filling is cooking, warm the flour tortillas in a separate skillet over low heat or in the microwave for about 20 seconds until pliable.
  6. To assemble the burritos, place a generous scoop of the turkey and bean mixture onto the center of each tortilla. Top with shredded cheese, sour cream, salsa, and avocado slices. Squeeze fresh lime juice over the top.
  7. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a burrito, ensuring the fillings are secured inside.
  8. Serve the burritos warm with extra lime wedges and your favorite sides, such as rice or a fresh salad.
