
Pinto Bean and Ground Turkey Tacos
These delicious tacos are made with seasoned ground turkey and flavorful pinto beans.
Ingredients
- Salt and pepper (to taste)
- Lime (1, juiced)
- Cilantro (1/4 cup, chopped)
- Sour cream (1/2 cup)
- Avocado (1, sliced)
- Tomato (1 medium, diced)
- Lettuce (1 cup, shredded)
- Tortillas (8 small flour tortillas)
- Garlic (2 cloves, minced)
- Onion (1 medium, diced)
- Taco seasoning (2 tablespoons)
- Pinto beans (1 can, drained and rinsed)
- Ground turkey (1 pound)
Instructions
- In a large skillet, cook the ground turkey over medium heat until browned.
- Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.
- Stir in the taco seasoning and pinto beans. Cook for an additional 5 minutes, until heated through.
- Warm the tortillas in a separate skillet or in the oven.
- Assemble the tacos by placing a spoonful of the turkey and bean mixture onto each tortilla.
- Top with shredded lettuce, diced tomato, sliced avocado, sour cream, and chopped cilantro.
- Squeeze fresh lime juice over the tacos and season with salt and pepper to taste.
- Serve hot and enjoy!
