Servings: 4

Ingredients

  • Ground turkey (1 lb)
  • Pinto beans (1 can (15 oz), drained and rinsed)
  • Onion (1, diced)
  • Garlic (2 cloves, minced)
  • Taco seasoning (2 tablespoons)
  • Salt (to taste)
  • Pepper (to taste)
  • Tortillas (8 small (corn or flour))
  • Lettuce (1 cup, shredded)
  • Tomato (1, diced)
  • Avocado (1, sliced)
  • Sour cream (1/2 cup)
  • Cilantro (1/4 cup, chopped)
  • Lime (1, juiced)

Instructions

  1. In a large skillet, heat a drizzle of olive oil over medium heat. Add the ground turkey and cook, stirring occasionally, until browned and cooked through, about 6-8 minutes.
  2. Add the diced onion and minced garlic to the skillet. Sauté for 3-4 minutes, or until the onion is translucent and fragrant.
  3. Stir in the taco seasoning and pinto beans, mixing well to combine. Cook for an additional 5 minutes, until the mixture is heated through.
  4. While the turkey and bean mixture is cooking, warm the tortillas in a separate skillet or wrap them in foil and place them in a preheated oven at 350°F (175°C) for 10 minutes.
  5. To assemble the tacos, place a generous spoonful of the turkey and bean mixture onto each warm tortilla.
  6. Top each taco with shredded lettuce, diced tomato, slices of avocado, a dollop of sour cream, and a sprinkle of chopped cilantro.
  7. Squeeze fresh lime juice over the tacos and season with salt and pepper to taste.
  8. Serve immediately while hot, and enjoy the explosion of flavors!
