Pinto Bean and Ground Turkey Tacos

Ingredients
- Ground turkey
- 1 lb
- Pinto beans
- 1 can (15 oz), drained and rinsed
- Onion

- Taco seasoning

- 8 small (corn or flour)
- Lettuce
- 1 cup, shredded

Instructions
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the ground turkey and cook, stirring occasionally, until browned and cooked through, about 6-8 minutes.
- Add the diced onion and minced garlic to the skillet. Sauté for 3-4 minutes, or until the onion is translucent and fragrant.
- Stir in the taco seasoning and pinto beans, mixing well to combine. Cook for an additional 5 minutes, until the mixture is heated through.
- While the turkey and bean mixture is cooking, warm the tortillas in a separate skillet or wrap them in foil and place them in a preheated oven at 350°F (175°C) for 10 minutes.
- To assemble the tacos, place a generous spoonful of the turkey and bean mixture onto each warm tortilla.
- Top each taco with shredded lettuce, diced tomato, slices of avocado, a dollop of sour cream, and a sprinkle of chopped cilantro.
- Squeeze fresh lime juice over the tacos and season with salt and pepper to taste.
