
Pinto Bean and Ham Casserole
This hearty pinto bean and ham casserole is packed with flavor and perfect for a comforting meal.
Ingredients
- Egg (1)
- Milk (1/2 cup)
- Cornbread mix (1 box)
- Shredded cheddar cheese (1 cup)
- Salt and pepper (to taste)
- Cumin (1 teaspoon)
- Chili powder (1 tablespoon)
- Chicken broth (1 cup)
- Tomato sauce (1 can (8 oz))
- Green bell pepper (1, chopped)
- Garlic (2 cloves, minced)
- Onion (1 medium, chopped)
- Ham (1 cup, diced)
- Pinto beans (2 cups, cooked)
Instructions
- Preheat the oven to 375°F.
- In a large skillet, cook the diced ham until browned. Remove from the skillet and set aside.
- In the same skillet, sauté the onion, garlic, and green bell pepper until softened.
- Add the cooked pinto beans, tomato sauce, chicken broth, chili powder, cumin, salt, and pepper to the skillet. Stir well to combine.
- Transfer the bean mixture to a greased casserole dish.
- In a separate bowl, prepare the cornbread mix according to package instructions, using the milk and egg.
- Pour the cornbread batter over the bean mixture in the casserole dish.
- Sprinkle shredded cheddar cheese on top of the cornbread batter.
- Bake in the preheated oven for 30-35 minutes, or until the cornbread is golden brown and cooked through.
- Remove from the oven and let it cool for a few minutes before serving.
