Pinto Bean and Rice Fritters

Ingredients
- Vegetable oil
- enough for frying
- Breadcrumbs
- 1 cup
- Black pepper
- 1 teaspoon
- Salt
- 1 teaspoon
- Paprika
- 1 teaspoon
- Cumin
- 1/2 teaspoon
- Cilantro
- 2 tablespoons, chopped
- Garlic
- 2 cloves, minced
- Onion
- 1 medium, finely chopped
- Cooked rice
- 2 cups
- Cooked pinto beans
- 2 cups
Instructions
- To start, add the cooked pinto beans to a large bowl. Use a fork or potato masher to mash the beans until they reach a paste-like consistency.
- Next, add in the cooked rice, finely chopped onion, minced garlic, chopped cilantro, cumin, paprika, salt, and black pepper. Stir everything together until it's well combined.
- Scoop out a portion of the mixture and shape it into a small patty or ball. Repeat this process until all of the mixture is used.
- Dip each patty in the breadcrumbs, ensuring it's fully coated. Shake off any excess breadcrumbs.
- Heat the vegetable oil in a skillet over medium heat. Once the oil is hot, add the fritters. Cook them for about 3-4 minutes per side, or until they're golden brown and crispy.
- Once cooked, remove the fritters from the skillet and place them on a paper towel-lined plate. This will help to drain any excess oil.
- Serve the fritters hot. They're great on their own, or you can pair them with your favorite dipping sauce. Enjoy!
