Ingredients

Vegetable oil
enough for frying
Breadcrumbs
1 cup
Black pepper
1 teaspoon
Salt
1 teaspoon
Paprika
1 teaspoon
Cumin
1/2 teaspoon
Cilantro
2 tablespoons, chopped
Garlic
2 cloves, minced
Onion
1 medium, finely chopped
Cooked rice
2 cups
Cooked pinto beans
2 cups

Instructions

  1. To start, add the cooked pinto beans to a large bowl. Use a fork or potato masher to mash the beans until they reach a paste-like consistency.
  2. Next, add in the cooked rice, finely chopped onion, minced garlic, chopped cilantro, cumin, paprika, salt, and black pepper. Stir everything together until it's well combined.
  3. Scoop out a portion of the mixture and shape it into a small patty or ball. Repeat this process until all of the mixture is used.
  4. Dip each patty in the breadcrumbs, ensuring it's fully coated. Shake off any excess breadcrumbs.
  5. Heat the vegetable oil in a skillet over medium heat. Once the oil is hot, add the fritters. Cook them for about 3-4 minutes per side, or until they're golden brown and crispy.
  6. Once cooked, remove the fritters from the skillet and place them on a paper towel-lined plate. This will help to drain any excess oil.
  7. Serve the fritters hot. They're great on their own, or you can pair them with your favorite dipping sauce. Enjoy!
