Pinto Bean and Sausage Casserole

Ingredients
- 2, sliced for garnish Green onions
- 1 cup Shredded cheddar cheese
- 1 teaspoon, or to taste Salt
- 1/2 teaspoon, or to taste Pepper
- 1 teaspoon Cumin
- 1 teaspoon Chili powder
- 1 cup Tomato sauce
- 1 can (14.5 ounces) Diced tomatoes
- 1, diced Bell pepper
- 2 cloves, minced Garlic
- 1, diced Onion
- 1 pound Italian sausage
- 1 can (15 ounces), drained and rinsed Pinto beans

Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the Italian sausage over medium heat until browned, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the diced onion, minced garlic, and diced bell pepper. Sauté until softened, about 5 minutes.
- Return the cooked sausage to the skillet. Add the pinto beans, diced tomatoes, tomato sauce, chili powder, cumin, salt, and pepper. Stir well to combine all the ingredients.
- Transfer the mixture to a casserole dish. Sprinkle the shredded cheddar cheese evenly over the top.
- Bake in the preheated oven for 30-35 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with sliced green onions before serving.
