Ingredients

Original recipe serves 6

Green onions
2, sliced for garnish
Shredded cheddar cheese
1 cup
Salt
1 teaspoon, or to taste
Pepper
1/2 teaspoon, or to taste
Cumin
1 teaspoon
Chili powder
1 teaspoon
Tomato sauce
1 cup
Diced tomatoes
1 can (14.5 ounces)
Bell pepper
1, diced
Garlic
2 cloves, minced
Onion
1, diced
Italian sausage
1 pound
Pinto beans
1 can (15 ounces), drained and rinsed

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the Italian sausage over medium heat until browned, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the diced onion, minced garlic, and diced bell pepper. Sauté until softened, about 5 minutes.
  4. Return the cooked sausage to the skillet. Add the pinto beans, diced tomatoes, tomato sauce, chili powder, cumin, salt, and pepper. Stir well to combine all the ingredients.
  5. Transfer the mixture to a casserole dish. Sprinkle the shredded cheddar cheese evenly over the top.
  6. Bake in the preheated oven for 30-35 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let it cool for a few minutes. Garnish with sliced green onions before serving.
