
Pinto Bean and Sausage Casserole
This hearty and flavorful pinto bean and sausage casserole is a perfect comfort food dish.
Ingredients
- Green onions (2, sliced (for garnish))
- Shredded cheddar cheese (1 cup)
- Salt and pepper (to taste)
- Cumin (1 teaspoon)
- Chili powder (1 tablespoon)
- Tomato sauce (1 can (8 oz))
- Diced tomatoes (1 can (14.5 oz))
- Bell pepper (1, chopped)
- Garlic (3 cloves, minced)
- Onion (1 medium, chopped)
- Italian sausage (1 lb, casings removed)
- Pinto beans (2 cans (15 oz each), drained and rinsed)
Instructions
- Preheat the oven to 375°F.
- In a large skillet, cook the Italian sausage over medium heat until browned. Remove from the skillet and set aside.
- In the same skillet, sauté the onion, garlic, and bell pepper until softened.
- Add the cooked sausage back to the skillet, along with the pinto beans, diced tomatoes, tomato sauce, chili powder, cumin, salt, and pepper. Stir well to combine.
- Transfer the mixture to a casserole dish and sprinkle with shredded cheddar cheese.
- Bake for 30-35 minutes, or until the cheese is melted and bubbly.
- Garnish with sliced green onions before serving.
