Ingredients

Original recipe serves 4

Fresh cilantro
1/4 cup, chopped
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Chili powder
1 teaspoon
Cumin
1/2 teaspoon
Diced tomatoes
1 can (14.5 ounces)
Pinto beans
1 can (15 ounces), drained and rinsed
Garlic
2 cloves, minced
Bell pepper
1, diced
Onion
1, diced
Sausage
1 pound, sliced

Instructions

  1. Heat a large skillet over medium heat. Add the sausage and cook until browned. Once done, remove the sausage from the skillet and set aside.
  2. In the same skillet, add the diced onion, bell pepper, and minced garlic. Cook until the vegetables are tender and the onion is translucent.
  3. Return the cooked sausage to the skillet. Add the pinto beans, diced tomatoes (with their juice), cumin, chili powder, salt, and pepper. Stir everything together until well combined.
  4. Cover the skillet and let it simmer for 15 minutes. This allows the flavors to meld together and the dish to heat through.
  5. Remove the skillet from the heat. Sprinkle the dish with the chopped cilantro and serve hot.

Tips

  • 💡 For a vegetarian version, substitute the sausage with a plant-based alternative.
  • 💡 For extra heat, add a diced jalapeno pepper with the bell pepper.
