
Pinto Bean and Sweet Potato Salad

Ingredients
- Salt and pepper (to taste)
- Honey (1 tablespoon)
- Olive oil (2 tablespoons)
- Lime juice (2 tablespoons)
- Cilantro (1/4 cup, chopped)
- Red onion (1/2 cup, thinly sliced)
- Pinto beans (1 can (15 oz), drained and rinsed)
- Salt (1/2 teaspoon)
- Cumin (1 teaspoon)
- Olive oil (2 tablespoons)
- Sweet potatoes (2 large, peeled and cubed)
Instructions
- Preheat the oven to 400°F.
- In a bowl, toss the sweet potatoes with olive oil, cumin, salt, and pepper.
- Spread the sweet potatoes in a single layer on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
