Instructions
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, toss the diced sweet potatoes with 2 tablespoons of olive oil, cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until well-coated.
- Spread the sweet potatoes in a single layer on a baking sheet and roast in the preheated oven for 20-25 minutes, or until they are tender and lightly caramelized, stirring halfway through.
- While the sweet potatoes are roasting, prepare the dressing. In a small bowl, whisk together the lime juice, remaining 1 tablespoon of olive oil, honey (if using), and a pinch of salt and pepper to taste.
