Ingredients

Original recipe serves 8

Anchovies
1 cup, rinsed and drained
Garlic
2 cloves, minced
Olive oil
1/2 cup, extra virgin
Fresh thyme leaves
2 tablespoons, chopped
Black pepper
1/2 teaspoon, freshly ground

Instructions

  1. Start by rinsing the anchovies under cold water to remove excess salt. Pat them dry with paper towels to ensure a smooth blend.
  2. In a food processor, combine the rinsed anchovies, minced garlic, extra virgin olive oil, chopped fresh thyme, and freshly ground black pepper.
  3. Process the mixture until it is smooth and creamy, scraping down the sides as necessary to incorporate all ingredients evenly.
  4. Transfer the Pissalat to a clean jar and seal it tightly. Refrigerate for at least 30 minutes to allow the flavors to meld beautifully.
  5. Pissalat can be stored in the refrigerator for up to 2 weeks. Enjoy it spread on crusty bread, as a dip for fresh vegetables, or as a flavorful addition to various dishes.

Tips

  • 💡 For a twist, consider adding a squeeze of lemon juice for brightness or some capers for an extra briny kick.
  • 💡 Experiment with different herbs like parsley or oregano to create your own signature version of Pissalat.
