Ingredients

  • Active sourdough starter or activated yeast (1/2 cup)
  • Warm water (1 1/2 cups (110°f/43°c))
  • All-purpose flour (4 cups (plus extra for dusting))
  • Salt (1 teaspoon)
  • Olive oil (2 tablespoons (for greasing and additional flavor))

Instructions

  1. In a large mixing bowl, combine the active sourdough starter or activated yeast with warm water, stirring gently until fully dissolved.
  2. Add the all-purpose flour and salt to the mixture. Stir with a wooden spoon or use your hands to combine until a rough dough forms.
  3. Transfer the dough to a lightly floured surface and knead for about 10 minutes, applying firm pressure until the dough becomes smooth and elastic.
  4. Shape the kneaded dough into a ball and place it in a bowl greased with olive oil. Make sure the dough is lightly coated with oil to prevent sticking.
  5. Cover the bowl with a damp cloth and let it rise. If using sourdough, allow it to ferment at room temperature for about 8 hours, or until it has doubled in size. If using activated yeast, let it rise for 1-2 hours until it doubles.
  6. Once risen, turn the dough out onto a floured surface and gently punch it down to release air. Divide the dough into two equal pieces and shape each into a ball.
  7. Cover the dough balls with a clean cloth and let them rest for another hour, allowing them to puff up and become easier to shape.
