Serves 24 cookies

Ingredients

All-purpose flour
2 cups
Baking powder
2 teaspoons
Eggs
3 large
Granulated sugar
3/4 cup
Unsalted butter
1/2 cup, melted
Anise extract
1 teaspoon
Salt
1/4 teaspoon

Instructions

  1. In a large mixing bowl, beat the eggs and sugar together until the mixture becomes thick and pale in color, about 3-5 minutes.
  2. Stir in the melted butter and anise extract, mixing well to combine.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the egg mixture, stirring until fully incorporated and a smooth batter forms.
  5. Preheat your pizzelle iron according to the manufacturer's instructions. It should be hot before you start cooking.
  6. Using a rounded tablespoon or a small ice cream scoop, drop the batter onto the center of the heated pizzelle iron. Be careful not to overfill, as the batter will spread.
  7. Close the lid of the pizzelle iron and cook for about 30-60 seconds, or until the pizzelle are golden brown and crisp.
  8. Carefully remove the pizzelle from the iron using a fork or tongs and allow them to cool on wire racks.
  9. Repeat the process with the remaining batter, making sure to re-grease the iron if necessary.

Tips

  • 💡 For a variation, try substituting the anise extract with vanilla or lemon extract for a different flavor profile.
  • 💡 To make chocolate pizzelle, add 1/4 cup of cocoa powder to the dry ingredients.
  • 💡 Pizzelle can be stored in an airtight container for up to 2 weeks, but they are best enjoyed fresh.
