- Garlic
- 3 cloves, minced
- Cumin
- 1 teaspoon
- Paprika
- 1 teaspoon

- Fresh cilantro

Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, minced garlic, and diced bell pepper. Sauté for about 5 minutes until they are softened and fragrant.
- Stir in the sliced plantains, diced tomatoes, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 20 minutes, or until the plantains are tender and infused with flavor.
- Add the drained black beans, stirring them into the stew, and simmer for another 5 minutes to heat through.
- Remove from heat and stir in the chopped cilantro and freshly squeezed lime juice.
