Plantain and Bean Stew

This hearty plantain and bean stew is packed with flavors and nutrients, combining the sweetness of ripe plantains with the earthiness of beans.

Ingredients

  • Lime (1, juiced)
  • Fresh cilantro (2 tablespoons, chopped)
  • Salt and pepper (to taste)
  • Paprika (1 teaspoon)
  • Cumin (1 teaspoon)
  • Vegetable broth (2 cups)
  • Tomatoes (2, diced)
  • Bell pepper (1, diced)
  • Garlic (3 cloves, minced)
  • Onion (1, chopped)
  • Black beans (2 cups, cooked)
  • Ripe plantains (3, peeled and sliced)

Instructions

  1. Heat some oil in a large pot over medium heat.
  2. Add the onion, garlic, and bell pepper. Sauté until softened, about 5 minutes.
  3. Add the sliced plantains, tomatoes, cumin, paprika, salt, and pepper. Cook for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until the plantains are tender.
  5. Add the cooked black beans and simmer for an additional 5 minutes.
  6. Stir in the chopped cilantro and lime juice.
  7. Taste and adjust the seasoning if needed.
  8. Serve the plantain and bean stew hot, garnished with additional cilantro if desired.
