
Plantain and Bean Stew
This hearty plantain and bean stew is packed with flavors and nutrients, combining the sweetness of ripe plantains with the earthiness of beans.
Ingredients
- Lime (1, juiced)
- Fresh cilantro (2 tablespoons, chopped)
- Salt and pepper (to taste)
- Paprika (1 teaspoon)
- Cumin (1 teaspoon)
- Vegetable broth (2 cups)
- Tomatoes (2, diced)
- Bell pepper (1, diced)
- Garlic (3 cloves, minced)
- Onion (1, chopped)
- Black beans (2 cups, cooked)
- Ripe plantains (3, peeled and sliced)
Instructions
- Heat some oil in a large pot over medium heat.
- Add the onion, garlic, and bell pepper. Sauté until softened, about 5 minutes.
- Add the sliced plantains, tomatoes, cumin, paprika, salt, and pepper. Cook for another 5 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until the plantains are tender.
- Add the cooked black beans and simmer for an additional 5 minutes.
- Stir in the chopped cilantro and lime juice.
- Taste and adjust the seasoning if needed.
- Serve the plantain and bean stew hot, garnished with additional cilantro if desired.
