Servings: 10

Ingredients

All-purpose flour
2 cups
Granulated sugar
1 cup
Unsalted butter
1/2 cup, softened
Eggs
3 large
Milk
1/2 cup
Vanilla extract
1 teaspoon
Baking powder
2 teaspoons
Ground cinnamon
1 teaspoon
Salt
1/4 teaspoon
Fresh plums
3 cups, pitted and sliced

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan with butter or line it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, salt, and ground cinnamon until well combined.
  3. In a large mixing bowl, beat the softened unsalted butter and granulated sugar together until the mixture is light and fluffy, about 3-4 minutes.
  4. Add the eggs to the butter mixture one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually incorporate the flour mixture into the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined; do not overmix.
  6. Gently fold in the sliced fresh plums, ensuring they are evenly distributed throughout the batter.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
