Servings: 8

Ingredients

Plums
4 cups, pitted and chopped
Granulated sugar
1/2 cup, adjust based on sweetness of plums
Cinnamon
1/2 teaspoon
Lemon juice
2 tablespoons
Water
1/2 cup

Instructions

  1. In a medium saucepan, combine the chopped plums, granulated sugar, cinnamon, water, and lemon juice.
  2. Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar.
  3. Once boiling, reduce the heat to low and let it simmer gently for 15-20 minutes, or until the plums are soft and the mixture has thickened to your desired consistency.
  4. Remove the saucepan from heat and allow the compote to cool slightly. It will thicken further as it cools.
  5. Serve the plum compote warm over pancakes or ice cream, or chill it in the refrigerator to enjoy it cold as a refreshing treat.
