Servings: 8
Ingredients
- Dark brown sugar
- 1 cup
- Unsalted butter
- 1/2 cup, softened
- Eggs
- 2, beaten
- Mixed dried fruit
- 2 cups (like currants, raisins, sultanas, and candied peel)
- All-purpose flour
- 1 cup
- Breadcrumbs
- 1 cup, fresh
- Mixed spice
- 1 tablespoon
- Black treacle
- 2 tablespoons
- Dark beer
- 1/2 cup
Instructions
- In a large bowl, cream together the brown sugar and softened butter until well combined.
- Add in the beaten eggs and mix well.
- Stir in the mixed dried fruit, ensuring all the pieces are well coated with the butter and sugar mixture.
- In a separate bowl, mix together the flour, breadcrumbs, and mixed spice.
- Gradually add the dry ingredients to the wet mixture, stirring constantly to avoid lumps.
- Slowly pour in the beer and black treacle, continuing to stir until the mixture is smooth and well combined.
- Grease a pudding basin and pour in the mixture. Cover with a lid or foil that has been greased on the underside to prevent sticking.
- Place the basin in a large pot filled with boiling water. The water should reach halfway up the sides of the basin.
- Cover the pot and simmer for 4 hours. Check occasionally to ensure the water level remains constant, adding more boiling water if necessary.
- Carefully remove the pudding from the pot using a tea towel or oven mitts and let it cool for a few minutes.
- Turn out the pudding onto a plate and serve warm. Traditional accompaniments include custard or cream, but it’s also delicious on its own.
