Ingredients

Original recipe serves 8

Dark brown sugar
1 cup
Unsalted butter
1/2 cup, softened
Eggs
2, beaten
Mixed dried fruit
2 cups (like currants, raisins, sultanas, and candied peel)
All-purpose flour
1 cup
Breadcrumbs
1 cup, fresh
Mixed spice
1 tablespoon
Black treacle
2 tablespoons
Dark beer
1/2 cup

Instructions

  1. In a large bowl, cream together the brown sugar and softened butter until well combined.
  2. Add in the beaten eggs and mix well.
  3. Stir in the mixed dried fruit, ensuring all the pieces are well coated with the butter and sugar mixture.
  4. In a separate bowl, mix together the flour, breadcrumbs, and mixed spice.
  5. Gradually add the dry ingredients to the wet mixture, stirring constantly to avoid lumps.
  6. Slowly pour in the beer and black treacle, continuing to stir until the mixture is smooth and well combined.
  7. Grease a pudding basin and pour in the mixture. Cover with a lid or foil that has been greased on the underside to prevent sticking.
  8. Place the basin in a large pot filled with boiling water. The water should reach halfway up the sides of the basin.
  9. Cover the pot and simmer for 4 hours. Check occasionally to ensure the water level remains constant, adding more boiling water if necessary.
  10. Carefully remove the pudding from the pot using a tea towel or oven mitts and let it cool for a few minutes.
  11. Turn out the pudding onto a plate and serve warm. Traditional accompaniments include custard or cream, but it’s also delicious on its own.
