Ingredients
- Chicken thighs
- 2 pounds, skinless and boneless
- Barbecue sauce
- 1 cup
- Lime juice
- 1/4 cup, freshly squeezed
- Garlic powder
- 1 teaspoon
- Cumin
- 1 teaspoon
- Smoked paprika
- 1 teaspoon
- Salt
- 1 teaspoon
- Black pepper
- 1/2 teaspoon
- Fresh cilantro
- 1/4 cup, chopped (for garnish)
- Lime wedges

Instructions
- In a medium bowl, whisk together the barbecue sauce, lime juice, garlic powder, cumin, smoked paprika, salt, and black pepper until well combined.
- Place the chicken thighs in a large ziplock bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish, then massage the marinade into the chicken to ensure even coating. Refrigerate for at least 2 hours, ideally overnight for maximum flavor.
- Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are evenly heated.
- Remove the chicken from the marinade, discarding any excess marinade. Grill the chicken thighs for about 6-8 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
- Once cooked, transfer the chicken to a plate and let it rest for about 5 minutes to retain its juices.
- Sprinkle freshly chopped cilantro over the grilled chicken thighs for a burst of freshness.
- Serve hot with lime wedges on the side for an extra zing!
