Pollo a La Barbacoa

Pollo a la Barbacoa is a mouthwatering Mexican classic that brings together the tantalizing flavors of smoky, tangy barbecue with succulent chicken thighs. Originating from the traditional cooking methods of the indigenous Taino people, who would cook meat in a pit covered with leaves, this dish has evolved into a beloved staple across Mexico. The combination of spices and lime in the marinade infuses the chicken with vibrant flavors, while the grilling process gives it a perfectly charred exterior. Ideal for summer barbecues or cozy family dinners, serve it with lime wedges and fresh cilantro for an authentic experience.

Ingredients

Chicken thighs
2 pounds, skinless and boneless
Barbecue sauce
1 cup
Lime juice
1/4 cup, freshly squeezed
Garlic powder
1 teaspoon
Cumin
1 teaspoon
Smoked paprika
1 teaspoon
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Fresh cilantro
1/4 cup, chopped (for garnish)
Lime wedges
for serving

Instructions

  1. In a medium bowl, whisk together the barbecue sauce, lime juice, garlic powder, cumin, smoked paprika, salt, and black pepper until well combined.
  2. Place the chicken thighs in a large ziplock bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish, then massage the marinade into the chicken to ensure even coating. Refrigerate for at least 2 hours, ideally overnight for maximum flavor.
  3. Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are evenly heated.
  4. Remove the chicken from the marinade, discarding any excess marinade. Grill the chicken thighs for about 6-8 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
  5. Once cooked, transfer the chicken to a plate and let it rest for about 5 minutes to retain its juices.
  6. Sprinkle freshly chopped cilantro over the grilled chicken thighs for a burst of freshness.
  7. Serve hot with lime wedges on the side for an extra zing!

Tips

  • 💡 For added heat, consider adding a teaspoon of chili powder or a dash of hot sauce to the marinade.
  • 💡 This dish pairs beautifully with grilled vegetables, rice, or corn tortillas for a complete meal.
  • 💡 If you prefer, you can bake the chicken in the oven at 400°F (200°C) for 25-30 minutes instead of grilling.
