Pollo al Limon

Pollo al Limon is a vibrant Italian lemon chicken dish that captivates the palate with its zesty flavors and aromatic herbs. This delightful recipe combines the brightness of fresh lemons with the savory goodness of grilled chicken, making it a perfect dish for summer gatherings or cozy family dinners. Originating from the sunny regions of Italy, this dish reflects the country’s love for fresh, simple ingredients that celebrate the flavors of the land.

Ingredients

Chicken breasts
4, boneless and skinless
Lemon
2, juiced and zested
Garlic
4 cloves, minced
Olive oil
1/4 cup
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Fresh parsley
1/4 cup, chopped (for garnish)

Instructions

  1. In a medium bowl, whisk together the lemon juice, lemon zest, minced garlic, olive oil, salt, and black pepper to create a flavorful marinade.
  2. Place the chicken breasts in a shallow dish and pour the lemon marinade over them, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes to allow the flavors to penetrate the chicken.
  3. Preheat your grill or grill pan over medium-high heat. Lightly oil the grill grates to prevent sticking.
  4. Remove the chicken from the marinade and let any excess marinade drip off. Discard the leftover marinade.
  5. Grill the chicken for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is beautifully charred and cooked through.
  6. Transfer the grilled chicken to a serving platter and sprinkle generously with chopped fresh parsley for a pop of color and freshness.
  7. Serve hot with your favorite side dishes such as grilled vegetables, a refreshing salad, or creamy polenta.

Tips

  • 💡 For an extra kick, add a pinch of red pepper flakes to the marinade.
  • 💡 Feel free to substitute chicken thighs for a juicier option.
  • 💡 This dish pairs wonderfully with a glass of white wine, like Pinot Grigio or Sauvignon Blanc.
