Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the chicken by seasoning with salt and pepper. In a shallow dish, beat the eggs with additional salt and pepper.
- In another shallow dish, combine the breadcrumbs and grated Parmesan cheese.
- Dip each chicken breast into the beaten eggs, ensuring they are well coated, then transfer them to the breadcrumb mixture, pressing gently to adhere the breadcrumbs.
- In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken breasts and cook until golden brown on both sides, approximately 3-4 minutes per side.
- Transfer the browned chicken to a baking dish. Pour the tomato sauce evenly over each chicken breast.
- Sprinkle the shredded mozzarella cheese generously over the tomato sauce.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Once out of the oven, garnish with chopped fresh basil before serving.
Tips
- For an extra layer of flavor, you can add Italian herbs (like oregano and thyme) to the breadcrumb mixture.
- If you prefer a healthier version, you can bake the breaded chicken instead of frying it. Simply spray the chicken with olive oil and bake at 400°F (200°C) for 20-25 minutes before adding the sauce and cheese.
