Ingredients

Chicken breasts
4, boneless and skinless
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Eggs
2, beaten
Breadcrumbs
1 cup
Parmesan cheese
1/2 cup, grated
Olive oil
1/4 cup, for frying
Tomato sauce
2 cups
Mozzarella cheese
1 cup, shredded
Fresh basil
1/4 cup, chopped for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the chicken by seasoning with salt and pepper. In a shallow dish, beat the eggs with additional salt and pepper.
  3. In another shallow dish, combine the breadcrumbs and grated Parmesan cheese.
  4. Dip each chicken breast into the beaten eggs, ensuring they are well coated, then transfer them to the breadcrumb mixture, pressing gently to adhere the breadcrumbs.
  5. In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken breasts and cook until golden brown on both sides, approximately 3-4 minutes per side.
  6. Transfer the browned chicken to a baking dish. Pour the tomato sauce evenly over each chicken breast.
  7. Sprinkle the shredded mozzarella cheese generously over the tomato sauce.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
