
Pollo Guisado
Pollo Guisado is a traditional Puerto Rican stewed chicken dish, packed with flavor and served with rice and beans.
Ingredients
- Salt and pepper (to taste)
- Cilantro (1/4 cup, chopped)
- Olives (1/2 cup, pitted)
- Carrots (2 medium, peeled and sliced)
- Potatoes (2 medium, peeled and diced)
- Sazon seasoning (1 packet)
- Adobo seasoning (1 tablespoon)
- Chicken broth (1 cup)
- Tomato sauce (1 cup)
- Bell pepper (1, chopped)
- Onion (1 medium, chopped)
- Garlic (4 cloves, minced)
- Sofrito (1/2 cup)
- Chicken (2 pounds, cut into pieces)
Instructions
- In a large pot, heat some oil over medium heat.
- Add the sofrito, garlic, onion, and bell pepper. Cook until the vegetables are softened.
- Add the chicken pieces and cook until browned on all sides.
- Stir in the tomato sauce, chicken broth, adobo seasoning, sazon seasoning, salt, and pepper.
- Cover the pot and simmer for 30 minutes, or until the chicken is cooked through.
- Add the diced potatoes, sliced carrots, and olives. Cook for an additional 15 minutes, or until the vegetables are tender.
- Garnish with chopped cilantro before serving.
- Serve hot with rice and beans.
