Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the sofrito, minced garlic, diced onion, and bell pepper to the pot. Sauté until the vegetables are softened and fragrant, about 5 minutes.
  3. Add the chicken pieces to the pot, seasoning with salt and pepper. Cook until the chicken is browned on all sides, about 8-10 minutes.
  4. Stir in the tomato sauce, chicken broth, adobo seasoning, and sazon seasoning. Bring the mixture to a gentle simmer.
  5. Cover the pot and let it simmer for 30 minutes, allowing the chicken to cook through and absorb the flavors.
  6. After 30 minutes, add the diced potatoes, sliced carrots, and olives. Cook for an additional 15 minutes, or until the vegetables are tender.
  7. Once cooked, garnish the dish with chopped cilantro before serving hot.
