- Chicken

- Green olives
- 1/2 cup, sliced
- Carrots
- 2, diced
- Potatoes
- 2, diced
- Sazon seasoning
- 1 tablespoon
- Adobo seasoning
- 1 tablespoon
- Chicken broth
- 2 cups
- Tomato sauce
- 1 cup
- Bell pepper
- 1, diced
- Onion
- 1, diced
- Garlic
- 4 cloves, minced
- Sofrito
- 1/2 cup
- Olive oil
- 2 tablespoons
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the sofrito, minced garlic, diced onion, and bell pepper to the pot. Sauté until the vegetables are softened and fragrant, about 5 minutes.
- Add the chicken pieces to the pot, seasoning with salt and pepper. Cook until the chicken is browned on all sides, about 8-10 minutes.
- Stir in the tomato sauce, chicken broth, adobo seasoning, and sazon seasoning. Bring the mixture to a gentle simmer.
- Cover the pot and let it simmer for 30 minutes, allowing the chicken to cook through and absorb the flavors.
- After 30 minutes, add the diced potatoes, sliced carrots, and olives. Cook for an additional 15 minutes, or until the vegetables are tender.
- Once cooked, garnish the dish with chopped cilantro before serving hot.
- Serve with fluffy rice and beans to enjoy a complete Puerto Rican meal.
