Servings: 4

Ingredients

Octopus
1.5 kg, cleaned
Potatoes
4 medium, peeled and cut into wedges
Garlic
4 cloves, minced
Olive oil
1/4 cup
White wine
1 cup
Paprika
1 teaspoon
Salt
to taste
Black pepper
to taste
Fresh parsley
for garnish

Instructions

  1. Preheat the oven to 200°C (390°F).
  2. In a large pot, bring enough water to a boil to cover the octopus. Add the octopus and boil for about 20 minutes until tender. Check doneness by piercing with a fork; it should be tender but not falling apart.
  3. Drain the octopus and transfer it to a baking dish.
  4. In the same baking dish, add the potato wedges, minced garlic, olive oil, salt, pepper, and paprika. Toss everything together until well coated.
  5. Pour the white wine evenly over the octopus and potatoes, allowing the flavors to meld.
  6. Cover the baking dish with aluminum foil to retain moisture and bake in the preheated oven for 1 hour.
  7. After 1 hour, carefully remove the foil and bake for an additional 30 minutes, or until the octopus is tender and the potatoes are golden-brown and crispy.
  8. Remove from the oven and let it rest for 5 minutes. Garnish with freshly chopped parsley before serving.
