Polvo Assado No Forno (Oven-Roasted Octopus)

Ingredients
- 1.5 kg, cleaned Octopus
- 4 medium, peeled and cut into wedges Potatoes
- 4 cloves, minced Garlic
- 1/4 cup Olive oil
- 1 cup White wine
- 1 teaspoon Paprika

- for garnish Fresh parsley

Instructions
- Preheat the oven to 200°C (390°F).
- In a large pot, bring enough water to a boil to cover the octopus. Add the octopus and boil for about 20 minutes until tender. Check doneness by piercing with a fork; it should be tender but not falling apart.
- Drain the octopus and transfer it to a baking dish.
- In the same baking dish, add the potato wedges, minced garlic, olive oil, salt, pepper, and paprika. Toss everything together until well coated.
- Pour the white wine evenly over the octopus and potatoes, allowing the flavors to meld.
- Cover the baking dish with aluminum foil to retain moisture and bake in the preheated oven for 1 hour.
- After 1 hour, carefully remove the foil and bake for an additional 30 minutes, or until the octopus is tender and the potatoes are golden-brown and crispy.
- Remove from the oven and let it rest for 5 minutes. Garnish with freshly chopped parsley before serving.
