Ingredients

Original recipe serves 6

Potatoes
2 pounds, peeled and thinly sliced
Unsalted butter
1 cup, melted
Salt
1 teaspoon, or to taste
Black pepper
1/2 teaspoon, or to taste

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Brush the bottom and sides of an ovenproof dish with a generous amount of melted butter.
  3. Arrange the potato slices in the dish, layering them in a beautiful circular pattern. Make sure each layer overlaps the previous one for a more structured final result.
  4. Brush each layer with a liberal amount of melted butter, then season with salt and pepper.
  5. Continue layering, brushing with butter, and seasoning, until all the potatoes and butter are used. Aim for the top layer to be as neat and tidy as possible as it will be the presentation side.
  6. Cover the dish with foil and bake for about 30 minutes.
  7. Remove the foil and bake for another 30 minutes, or until the potatoes are golden, crispy, and easily pierced with a fork.
  8. Let the Pommes Anna cool for a few minutes before inverting onto a plate. Cut into wedges and serve while still warm.

Tips

  • 💡 For an extra touch of flavor, you can add some finely chopped fresh herbs, like thyme or rosemary, between the layers.
  • 💡 Make sure to slice the potatoes as thinly as possible. A mandoline is a great tool for this.
  • 💡 The butter not only adds flavor but also helps the potatoes to crisp up. Don't skimp on it!
