Instructions
- Season the pork chops generously with salt and black pepper on both sides, allowing them to rest for 15 minutes to absorb the seasoning.
- In a large skillet, heat the olive oil over medium-high heat until shimmering.
- Add the pork chops to the skillet and sear for 4-5 minutes on each side, or until they are cooked through and have a beautiful golden-brown crust. Use a meat thermometer to ensure they reach an internal temperature of 145°F (63°C).
- Once cooked, remove the pork chops from the skillet and set them aside on a plate to rest.
- In the same skillet, add the sliced onion and sauté for about 5 minutes, or until softened and translucent, scraping up any browned bits from the bottom of the pan to enhance the flavor.
- Pour in the apple cider, followed by the Dijon mustard, honey, and fresh thyme. Stir well to combine all the ingredients.
- Bring the mixture to a gentle simmer and let it cook for 5 minutes, allowing the sauce to reduce and thicken slightly.
- Return the pork chops to the skillet, spooning the sauce over them, and cook for an additional 2-3 minutes to heat through.
- Serve the pork chops hot, drizzled with the luscious apple cider sauce, and garnish with additional fresh thyme if desired.
Tips
- For added depth of flavor, consider marinating the pork chops in apple cider, garlic, and thyme for a few hours before cooking.
- If you prefer a spicier kick, add a pinch of red pepper flakes to the cider sauce.
- This dish pairs beautifully with sides like roasted Brussels sprouts or creamy garlic mashed potatoes.
