Ingredients
- Vegetable oil (2 tablespoons)
- Cayenne pepper (1/2 teaspoon)
- Paprika (1 teaspoon)
- Onion powder (1 teaspoon)
- Garlic powder (1 teaspoon)
- Black pepper (1 teaspoon)
- Salt (2 teaspoons)
- Pork shoulder (3 pounds)
Instructions
- Preheat the oven to 325°F.
- Season the pork shoulder with salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.
- Heat the vegetable oil in a large oven-safe pot or Dutch oven over medium-high heat.
- Add the pork shoulder to the pot and sear on all sides until browned, about 5 minutes per side.
- Cover the pot and transfer it to the preheated oven.
- Roast the pork for 2 hours, or until it reaches an internal temperature of 145°F.
- Remove the pot from the oven and let the pork rest for 10 minutes.
- Using two forks, shred the pork into bite-sized pieces, separating the meat from the cracklins.
- Serve the tender pork with the crispy cracklins on top.
