Ingredients

  • Vegetable oil (2 tablespoons)
  • Cayenne pepper (1/2 teaspoon)
  • Paprika (1 teaspoon)
  • Onion powder (1 teaspoon)
  • Garlic powder (1 teaspoon)
  • Black pepper (1 teaspoon)
  • Salt (2 teaspoons)
  • Pork shoulder (3 pounds)

Instructions

  1. Preheat the oven to 325°F.
  2. Season the pork shoulder with salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.
  3. Heat the vegetable oil in a large oven-safe pot or Dutch oven over medium-high heat.
  4. Add the pork shoulder to the pot and sear on all sides until browned, about 5 minutes per side.
  5. Cover the pot and transfer it to the preheated oven.
  6. Roast the pork for 2 hours, or until it reaches an internal temperature of 145°F.
  7. Remove the pot from the oven and let the pork rest for 10 minutes.
  8. Using two forks, shred the pork into bite-sized pieces, separating the meat from the cracklins.
  9. Serve the tender pork with the crispy cracklins on top.
