Instructions
- In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, cornstarch, and water until smooth. Set aside to allow the flavors to meld.
- Heat the vegetable oil in a large skillet or wok over high heat until shimmering.
- Add the sliced pork tenderloin and cook for about 3-4 minutes, stirring frequently until browned and cooked through. Remove the pork from the skillet and set aside.
- In the same skillet, add the sliced onion, bell peppers, minced garlic, and ginger. Stir-fry for 2-3 minutes until the vegetables are slightly softened but still crisp.
- Add the pineapple chunks to the skillet and cook for an additional 2 minutes, allowing the pineapple to caramelize slightly.
- Return the cooked pork to the skillet and pour the prepared sauce over the mixture. Stir fry for another 2 minutes, or until the sauce thickens and coats the ingredients beautifully.
- Season with salt and pepper to taste, adjusting according to your preference.
- Serve the stir fry over a bed of warm cooked rice and garnish with freshly sliced green onions for a burst of color and flavor.
Tips
- For an extra kick, consider adding diced Thai chili peppers or a splash of Sriracha to the stir fry.
- Feel free to substitute pork with chicken or tofu for a different protein option.
- Using fresh pineapple enhances the flavor, but canned pineapple can also work in a pinch.
