Servings: 4

Ingredients

  • Pork shoulder (2 pounds, cut into 1-inch cubes)
  • Brown sugar (1/4 cup)
  • Soy sauce (1/4 cup)
  • Barbecue sauce (1/2 cup, plus extra for serving)
  • Lemon juice (2 tablespoons)
  • Garlic (4 cloves, minced)
  • Onion (1 medium, chopped)
  • Salt (1 teaspoon)
  • Black pepper (1/2 teaspoon)
  • Skewers (8 (if using wooden skewers, soak them in water for 30 minutes))

Instructions

  1. In a large bowl, whisk together the barbecue sauce, soy sauce, brown sugar, minced garlic, chopped onion, lemon juice, salt, and black pepper until the sugar is fully dissolved.
  2. Add the pork cubes to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 2 hours, or ideally overnight to enhance the flavor.
  3. Preheat your grill to medium-high heat, ensuring the grates are clean and well-oiled to prevent sticking.
  4. Thread the marinated pork cubes onto the skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill, cooking for approximately 15-20 minutes, turning occasionally. The pork should be cooked through with a nice char (internal temperature should reach 145°F or 63°C).
  6. Once cooked, remove the skewers from the grill and allow them to rest for a few minutes before serving.
  7. Serve the pork barbecue skewers with additional barbecue sauce on the side for dipping. Enjoy with your favorite sides such as coleslaw, corn on the cob, or baked beans!
