Instructions
- Preheat the oven to 400°F (200°C).
- Season the pork tenderloin generously with salt and freshly ground black pepper on all sides.
- Using a sharp knife, slice the pork tenderloin lengthwise, about 3/4 of the way through, to create a pocket for the stuffing.
- Stuff the pocket of the pork tenderloin with the crumbled blue cheese and chopped rosemary, pressing gently to secure it inside.
- Wrap the bacon slices around the pork tenderloin, overlapping them slightly to ensure even coverage. Secure the bacon with toothpicks if needed.
- In an oven-safe skillet, heat the olive oil over medium-high heat.
- Carefully add the bacon-wrapped pork tenderloin to the skillet and sear on all sides until the bacon is crispy and golden brown, approximately 5-7 minutes.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
- Once cooked, remove the pork tenderloin from the oven and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute, ensuring a moist and tender result.
