Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the pork tenderloin generously with salt and freshly ground black pepper on all sides.
  3. Using a sharp knife, slice the pork tenderloin lengthwise, about 3/4 of the way through, to create a pocket for the stuffing.
  4. Stuff the pocket of the pork tenderloin with the crumbled blue cheese and chopped rosemary, pressing gently to secure it inside.
  5. Wrap the bacon slices around the pork tenderloin, overlapping them slightly to ensure even coverage. Secure the bacon with toothpicks if needed.
  6. In an oven-safe skillet, heat the olive oil over medium-high heat.
  7. Carefully add the bacon-wrapped pork tenderloin to the skillet and sear on all sides until the bacon is crispy and golden brown, approximately 5-7 minutes.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
  9. Once cooked, remove the pork tenderloin from the oven and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute, ensuring a moist and tender result.
