Ingredients

Pork tenderloin
1.5 pounds
Salt
to taste
Black pepper
to taste
Fresh thyme
2 tablespoons, chopped
Unsalted butter
2 tablespoons
Shallots
4, thinly sliced
Brown sugar
1 tablespoon
Balsamic vinegar
1/4 cup

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the pork tenderloin generously with salt and black pepper on all sides to enhance the natural flavors.
  3. In a large oven-safe skillet, melt the unsalted butter over medium-high heat until it's bubbling.
  4. Once the butter is sizzling, add the seasoned pork tenderloin and sear it for 2-3 minutes on each side until it’s deeply browned, creating a flavorful crust.
  5. Transfer the skillet with the pork to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 145°F (63°C) for perfectly cooked pork.
  6. Remove the pork tenderloin from the skillet and allow it to rest for 5 minutes on a cutting board before slicing to retain its juices.
  7. While the pork rests, add the thinly sliced shallots to the same skillet. Cook over medium heat, stirring occasionally, until the shallots are tender and caramelized, about 10 minutes.
  8. Stir in the brown sugar and balsamic vinegar, scraping up any browned bits from the bottom of the skillet. Cook for an additional 2 minutes until the sauce thickens slightly and coats the shallots.
  9. Slice the rested pork tenderloin and serve it warm, generously topped with the caramelized shallots and their delicious balsamic sauce.
