
Pork Tenderloin with Mango Chutney

Ingredients
- Red pepper flakes (1/4 teaspoon)
- Honey (1 tablespoon)
- Lime juice (1 tablespoon)
- Fresh cilantro (2 tablespoons, chopped)
- Red onion (1/2, finely chopped)
- Mango (1, peeled and diced)
- Garlic powder (1/2 teaspoon)
- Paprika (1/2 teaspoon)
- Black pepper (1/2 teaspoon)
- Salt (1 teaspoon)
- Olive oil (2 tablespoons)
- Pork tenderloin (1 pound)
Instructions
- Preheat the oven to 400°F.
- Season the pork tenderloin with salt, black pepper, paprika, and garlic powder.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the pork tenderloin on all sides until browned, about 2-3 minutes per side.
- Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 145°F.
- While the pork is cooking, prepare the mango chutney by combining diced mango, red onion, cilantro, lime juice, honey, and red pepper flakes in a bowl.
- Mix well to combine all the ingredients.
- Remove the pork tenderloin from the oven and let it rest for 5 minutes.
- Slice the pork into medallions and serve with the mango chutney on top.
