Pork tenderloin
1 pound
Olive oil
2 tablespoons
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Paprika
1 teaspoon
Garlic powder
1 teaspoon
Red onion
1 small, diced
Mango
1 large, peeled and diced
Fresh cilantro
1/4 cup, chopped
Lime juice
2 tablespoons
Honey
1 tablespoon
Red pepper flakes
1/2 teaspoon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, combine salt, black pepper, paprika, and garlic powder. Rub this seasoning mix all over the pork tenderloin for an even coating.
  3. In an oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the pork tenderloin and sear it on all sides until browned, about 2-3 minutes per side.
  4. Transfer the skillet to the preheated oven and roast the pork for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
  5. While the pork is roasting, prepare the mango chutney by combining the diced mango, red onion, cilantro, lime juice, honey, and red pepper flakes in a mixing bowl. Stir well to ensure all ingredients are well combined.
