Pork Tenderloin with Peach Salsa

Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together 1/2 teaspoon of salt and black pepper. Rub this mixture all over the pork tenderloin to season it evenly.
- In an oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork tenderloin and sear it on all sides until browned, about 2 minutes per side.
- Transfer the skillet to the preheated oven and roast the pork for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
- Remove the pork tenderloin from the oven and let it rest for 5 minutes before slicing to allow the juices to redistribute.
- While the pork is resting, prepare the peach salsa. In a medium bowl, combine the diced peaches, red onion, cilantro, lime juice, honey, jalapeno, and the remaining 1/2 teaspoon of salt. Mix well to combine.
