Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the grated carrots, ground pork, uncooked rice, finely chopped onion, beaten egg, bread crumbs, milk, salt, black pepper, and nutmeg. Mix thoroughly until all ingredients are well incorporated.
- Grease a casserole dish with butter to prevent sticking and ensure a golden crust.
- Transfer the carrot and pork mixture into the prepared casserole dish, spreading it evenly across the bottom.
- Cover the dish tightly with aluminum foil to retain moisture and bake for 45 minutes.
- After 45 minutes, remove the foil and sprinkle additional bread crumbs over the top for a crispy finish. Return to the oven and bake for an additional 15 minutes, or until the top is golden brown and the casserole is cooked through.
- Allow the Porkkanalaatikko to cool for a few minutes before serving hot, allowing the flavors to meld beautifully.
Tips
- For an extra layer of flavor, consider adding some sautéed mushrooms or a handful of spinach to the mixture.
- You can substitute ground pork with ground beef or turkey for a lighter version.
- If you prefer a creamier texture, replace half of the milk with cream.
